Hearty Healthy Breakfast Scramble
Sunday morning breakfast is my favorite ritual of the week. When you lazily wake up, do a little stretch, and breathe in the smell of fresh coffee grounds in the French press. There’s no plans, not on a Sunday. Nothing to do, nowhere to rush off to. Maybe you’ll cook to prep for the week ahead, or maybe you’ll binge-watch TV. In the first few hours after waking up, it doesn’t matter. You only have to think about you. And for you, a healthy breakfast that tastes like a very unhealthy breakfast is what’s in store.
It should come as no surprise that my Sunday morning always involves a big breakfast. On the weekdays I always try to go light in the mornings. It’s all smoothies or overnight oats, like my recent smoothie recipe. Sometimes, it’s just an apple with some peanut butter. They’re always enjoyable, but they lack that leisurely quality of a warm, fresh-cooked meal.
But on Sundays, I treat myself to an extra-sweet coffee while I make up this hearty, healthy breakfast scramble. With my hair in a sloppy bun and my pajamas still on, I eat slowly, savoring the warmth on a cold winter morning. It’s one of the best moments of human existence.
So, how do we make it?
First off, the best part about a scramble is that it doesn’t have any limits. I give the recipe for the version that I always make, but that doesn’t mean you have to stick to it. If you hate broccoli, use cauliflower. If you love the idea of bell peppers tossed in, then toss them in. It’ll always be delicious, because you made it and you know what you’re doing. And if it’s not, blame the Cooking Gods.
In order to maximize the experience, you have to make the scramble in your pajamas, without having showered or put on makeup. You basically need to be as unkempt as possible. That’s just how it works, I don’t make the rules. Just make your coffee or tea and then jump straight into cooking after you wake up.
Soon enough, your scramble will await you.
4 Oz. Breakfast Sausage
1 Medium White Potato, peeled and chopped
1 Cup Broccoli (thawed if frozen)
1 Cup Water, Divided
1 Tablespoon Minced Garlic
1/2 Teaspoon Cumin
Salt, to taste
Pepper, to taste
1 Cup Spinach
1/4 Cup Shredded Mexican Cheese
1 Tablespoon Unsalted Butter
1 Large Egg (2 if scrambling)
In a medium skillet or griddle, brown sausage over medium-high heat. Once browned, drain all but 1-2 tablespoons of grease. Bring heat down to medium. Add potatoes and broccoli and stir with meat. Toss in 1/2 cup water, stir again, then cover and simmer for about five minutes, or until potatoes are softened. Add garlic and spices, mix well. If previous water is gone, add another 1/2 cup water. Add spinach and stir, cooking until leaves are reduced in size, about five minutes.
Remove from heat. Layer cheese over top, set aside. (You can put it in a bowl, but who needs dishes when you can eat straight out of the griddle?)
In small egg pan, melt butter and cook egg according to preference (I like over easy or sunny side up). Place egg on cheese, let sit one minute to melt.
And just like that, your Sunday morning has been taken from a level 8 to a level 20 on the Happiness Scale. I know that sounds like hyperbole, but food really is a comfort. After a long week we’ve all earned a big, hearty breakfast. “Treat Yoself” isn’t just a saying, it’s a lifestyle. And this dish is one way to treat yoself.
We’re coming to the end of January, which means more daylight and some warmer weather in our futures. My kickboxing class is getting me ready for better weather, and my weekly yoga session is helping me find peace until then. I hope you all are finding the same peace, no matter where it comes from.
