Stock Pot Apple Cider
I awoke this week to the scent of Fall in the air. A crisp cold seeped in through windowpanes and doorways and settled into my bones. Everything felt like it slowed down just a tad, the way it does when summer says its final goodbye for the year. The feeling was completed when the first frost swept through and covered the ground in its shimmer.
In spite of the frost, the rain still comes in waves and sprinkles. I enjoy sitting by the balcony door, watching it fall on the trees outside while I remain firmly, and warmly, in my house.
As everyone harvests their crops and backyard gardens and brings in their summer toys for the year, I started to wonder what to do about winter recipes. I only began to cook for myself regularly back in March, which means that I have never cooked in winter before, nor have I ever had to deal with the poor selection of produce that Alaskans get in winter.
Not one to be deterred, I took to Pinterest for ideas on were to start. It was there that I saw a photo of apple cider, and I was inspired. With the cold moving in quickly, it’s really nice to have something to warm my hands on. I have since made several rounds of my own recipe, and it’s turned out wonderfully every time.
If you’re in the same boat, then here is my recipe for stock pot apple cider!
Water (At least 8 Cups, at Most 12)
4-6 apples, cored and quartered
1 Naval Orange, thinly sliced
Fresh Ginger, sliced
1/4 Cup Brown Sugar
1 Tablespoon Vanilla Syrup OR 1 teaspoon Vanilla Extract
1/8 Teaspoons Nutmeg
1/8 Teaspoon Pumpkin Pie Spice
Dash of Cinnamon OR 2 Cinnamon Sticks
Toss all ingredients into the stock pot, add water, cover and let simmer on low heat for 3-4 hours.
It’s really that simple! If you want the flavor to be really strong, like those powder packets, you could add another half hour to the maximum simmer time and another 1/4 cup of brown sugar. Personally, I like mine to have a little more spice to it, but I understand that some people like it sweeter.
What warm winter drinks have you been making lately? My favorite is hot chocolate, especially with marshmallows and whipped cream on top. I’ll have to post that recipe in a future post.
